Vegan Pan-Fried Zucchini Pizza

Ingredients

  • 1 medium zucchini
  • 2 tablespoons whole-meal flour
  • 1 flax-egg, beaten
  • 1/2 cup chopped parsley or coriander
  • 1 teaspoon tuscan seasoning
  • salt and pepper, to taste
  • pizza toppings of your choice (e.g., spinach, cherry tomatoes, vegan cheese)

Preparation

  1. Grate zucchini and squeeze out as much liquid as possible.

  2. In a mixing bowl, combine grated zucchini, flour, beaten flax-seed egg, parsley or coriander, and seasonings.

  3. Transfer the mixture to a lightly greased frying pan and spread it out into a circle.

  4. Fry on low heat covered with a lid for 7 minutes or until the bottom is crispy brown.

  5. Flip the zucchini base, add toppings, and fry for another 5 minutes.

  6. Serve immediately and enjoy.
