Gratitude Greens with Edamame and Avocado
Ingredients
- 1 Cup Edamame beans (out of pods)
- 5 Full Garlic cloves (peeled)
- 1x Bunch Fresh Parsley (chopped)
- 1x Bunch Asparagus
- 1 Tbsp Hemp Oil
- 2x Full Avocados
- 1 Bunch Fresh Kale (chopped)
- Nutritional Yeast (Optional)
Preparation
In a pan, lightly cook edamame, garlic, parsley and asparagus until soft and golden. Remove from heat.
Wash kale bunch.
In a large bowl, take kale leaves off stalks and drizzle lightly with hemp seed oil, and spoon avocado on top of leaves.
Using your hands, massage the avocado and oil into the kale until soft.
Spoon edamame mix onto kale, and top with nutritional yeast (optional) to serve.
