Light Potato Salad
Ingredients
- 200g baby new potatoes
- 100g green beans
- 100g asparagus
- 1 red onion
- 1 garlic clove
- 1/2 lemon, juiced
- 1 heaped tbsp fresh parsley
- 1 heaped tbsp fresh chives
- 3 tbsp alpro plain unsweetened yoghurt
- 1 tbsp olive oil
- salt & pepper
Preparation
Boil the new potatoes until just soft, cut the asparagus & green beans in half & then steam for 5 minutes
Very finely dice the red onion & grate the garlic, finely chop all the herbs
In a large bowl add the yoghurt, olive oil, lemon juice, herbs, grated garlic & diced onion
Season with salt & pepper to taste
Once the vegetables are ready toss them in the bowl with the yoghurt amalgamation
Serve hot, warm or cold !!
