Light Potato Salad

Ingredients

  • 200g baby new potatoes
  • 100g green beans
  • 100g asparagus
  • 1 red onion
  • 1 garlic clove
  • 1/2 lemon, juiced
  • 1 heaped tbsp fresh parsley
  • 1 heaped tbsp fresh chives
  • 3 tbsp alpro plain unsweetened yoghurt
  • 1 tbsp olive oil
  • salt & pepper

Preparation

  1. Boil the new potatoes until just soft, cut the asparagus & green beans in half & then steam for 5 minutes

  2. Very finely dice the red onion & grate the garlic, finely chop all the herbs

  3. In a large bowl add the yoghurt, olive oil, lemon juice, herbs, grated garlic & diced onion

  4. Season with salt & pepper to taste

  5. Once the vegetables are ready toss them in the bowl with the yoghurt amalgamation

  6. Serve hot, warm or cold !!
