Healthy Green Pasta with Vegetables

Ingredients

  • 400 g penne pasta
  • 1 broccoli head
  • 3 handfuls of kale
  • 3 handfuls of spinach
  • 3 garlic cloves
  • 1/2 cup walnuts
  • juice of a lemon
  • 3 tbsp nutritional yeast
  • 2 handfuls of basil
  • 2 tbsp olive oil
  • pinch of salt
  • pinch of pepper
  • 2 handfuls of mixed green leaves
  • handful of mixed seeds

Preparation

  1. Cook the penne pasta according to package directions until al dente.

  2. While pasta is cooking, blend walnuts, garlic, lemon juice, nutritional yeast, basil, and olive oil to create a smooth sauce.

  3. Steam or sauté the broccoli, kale, and spinach until tender but still vibrant.

  4. Drain the pasta and combine it with the sauce and cooked greens in a large bowl.

  5. Season with salt and pepper, then stir in the mixed green leaves and sprinkle with mixed seeds before serving.
