Homemade Japanese Strawberry Mochi

Ingredients

Dough

  • 150g glutinous rice flour
  • 150ml water
  • 50g Xucker
  • 2 tablespoons potato starch

Filling

  • 100g unsweetened peanut butter
  • 2 tablespoons Xucker
  • 16 strawberries

Preparation

  1. Mix the glutinous rice flour with Xucker until combined and add the water, stirring until a smooth, homogeneous mixture forms.

  2. Place the bowl in the microwave at 800 watts for 3.5 minutes until the dough rises, and do not open or stir during this time.

  3. Let the mixture cool for 10 minutes as it will be very hot.

  4. Meanwhile, mix the peanut butter with Xucker to prepare the filling.

  5. Dust the work surface generously with potato starch since the mixture is very sticky.

  6. Roll out the mixture and stretch it with your hands until a thin, round dough forms, making it as large and thin as possible initially as further rolling becomes more difficult.

  7. Use a round cookie cutter or an upside-down glass to cut out circles.

  8. Place a teaspoon of peanut butter in each circle, add a strawberry, then fold up the edges and press together until the mochi are sealed.
