Instant Pot Tomato Soup
Ingredients
- 1 28 oz can diced or whole tomatoes
- 1 tbsp tomato paste
- 2 cups veg broth
- 1 medium onion chopped
- 2 garlic cloves minced
- 1 tsp Italian seasoning
- 1/2 tsp chili flakes
- Sprinkle of salt and pepper
Garnish
- fresh basil
- optional shredded parmesan
Preparation
Hit sauté and add a splash of oil, with option to also add a teaspoon of butter or vegan butter.
After 4 minutes, add garlic and spices, stirring and cooking for 1 more minute.
Hit cancel and add tomatoes and broth.
Stir and cover.
Pressure cook for 9 minutes and naturally release for 10 minutes or more.
Using a hand blender, blend the soup until smooth and creamy.
Top with basil and fresh parmesan.
Tips
This soup serves 2-3 people and can be customized by adding cream or milk for extra creaminess, or spinach for more greens after cooking.
