Instant Pot Tomato Soup

Ingredients

  • 1 28 oz can diced or whole tomatoes
  • 1 tbsp tomato paste
  • 2 cups veg broth
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1/2 tsp chili flakes
  • Sprinkle of salt and pepper

Garnish

  • fresh basil
  • optional shredded parmesan

Preparation

  1. Hit sauté and add a splash of oil, with option to also add a teaspoon of butter or vegan butter.

  2. After 4 minutes, add garlic and spices, stirring and cooking for 1 more minute.

  3. Hit cancel and add tomatoes and broth.

  4. Stir and cover.

  5. Pressure cook for 9 minutes and naturally release for 10 minutes or more.

  6. Using a hand blender, blend the soup until smooth and creamy.

  7. Top with basil and fresh parmesan.

Tips

  1. This soup serves 2-3 people and can be customized by adding cream or milk for extra creaminess, or spinach for more greens after cooking.
