King Oyster Mushroom Chicken Salad Wrap

Ingredients

  • 2 king oyster mushrooms
  • Celery
  • Red onion
  • Tomatoes
  • Relish
  • Green onions

Sauce

  • 1 cup cashews
  • 1 lemon
  • Pepper
  • Salt
  • Dill weed
  • Onion powder
  • 2 garlic cloves
  • Water

Preparation

  1. Soak the cashews in water for at least 4 hours or overnight.

  2. Shred the king oyster mushrooms.

  3. Sauté the shredded mushrooms until golden brown.

  4. Mix the sautéed mushrooms with celery, red onion, tomatoes, relish, and green onions in a bowl.

  5. In a blender, add the soaked cashews, juice of one lemon, pepper, salt, dill weed, onion powder, 2 garlic cloves, and water; blend until desired consistency.

  6. Add the sauce to the vegetable mixture to taste.

Serving suggestions

  1. Enjoy with lettuce wraps or crackers.
