King Oyster Mushroom Chicken Salad Wrap
Ingredients
- 2 king oyster mushrooms
- Celery
- Red onion
- Tomatoes
- Relish
- Green onions
Sauce
- 1 cup cashews
- 1 lemon
- Pepper
- Salt
- Dill weed
- Onion powder
- 2 garlic cloves
- Water
Preparation
Soak the cashews in water for at least 4 hours or overnight.
Shred the king oyster mushrooms.
Sauté the shredded mushrooms until golden brown.
Mix the sautéed mushrooms with celery, red onion, tomatoes, relish, and green onions in a bowl.
In a blender, add the soaked cashews, juice of one lemon, pepper, salt, dill weed, onion powder, 2 garlic cloves, and water; blend until desired consistency.
Add the sauce to the vegetable mixture to taste.
