Extra Creamy Hummus with Fresh Toppings
Ingredients
- 2 cans (15 oz) organic chickpeas, drained
- 1 cup good quality tahini
- Juice of 1 large lemon
- Chickpea juice (aquafaba)
- 3-4 cloves garlic
- 1-2 tsp salt
- 1 tsp pepper
Preparation
Blend all ingredients in a Vitamix until smooth and creamy
Plate the hummus in a shallow bowl and decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper
Serve with warm pita bread
