Extra Creamy Hummus with Fresh Toppings

Ingredients

  • 2 cans (15 oz) organic chickpeas, drained
  • 1 cup good quality tahini
  • Juice of 1 large lemon
  • Chickpea juice (aquafaba)
  • 3-4 cloves garlic
  • 1-2 tsp salt
  • 1 tsp pepper

Preparation

  1. Blend all ingredients in a Vitamix until smooth and creamy

  2. Plate the hummus in a shallow bowl and decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper

  3. Serve with warm pita bread
