Extra Creamy Classic Hummus

Ingredients

  • 2 cans (15 oz) organic chickpeas
  • Chickpea juice from the can
  • 1/2 to 1 cup good quality tahini
  • Juice from one large lemon
  • 3-4 cloves garlic
  • 1-2 tsp salt
  • 1 tsp pepper

Preparation

  1. Drain one can of chickpeas and reserve the liquid from the second can.

  2. Combine all ingredients, including the reserved chickpea juice, in a blender.

  3. Blend until smooth and creamy.

  4. Plate the hummus in a shallow bowl and decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

Tips

  1. Enjoy with warm pita bread, favorite veggies, or as a spread in wraps and other dishes.
