Mango Passion Fruit Parfaits

Ingredients

  • 1 1/2 mangoes
  • 150 ml coconut yoghurt
  • Puffed quinoa
  • 400 ml coconut yoghurt
  • 6 passion fruits
  • 6 strawberries
  • 1/2 mango diced

Preparation

  1. Blend 1 1/2 mangoes with 150 ml coconut yoghurt to create a mango lassi base

  2. Prepare the fruits by halving the passion fruits and dicing any additional mango if needed

  3. In parfait glasses, layer the ingredients starting with puffed quinoa, followed by mango lassi, coconut yoghurt, and fresh fruits like passion fruit pulp, strawberries, and diced mango; repeat layers as desired

  4. Chill the parfaits in the refrigerator for at least 30 minutes before serving to allow flavors to meld
