Pink Fig Parfaits

Ingredients

Blackberry chia pudding

  • 4 tbsp chia seeds
  • 3/4 cup plant milk
  • 100 g coconut yoghurt
  • 1 tsp maple syrup
  • 100 g mashed blackberries

Parfait components

  • Coconut yoghurt
  • Pink pita coconut yoghurt
  • Puffed quinoa
  • Figs

Preparation

  1. Mix the blackberry chia pudding ingredients together and refrigerate for at least 30 minutes to set

  2. Layer the parfait in glasses or bowls with blackberry chia pudding, coconut yoghurt, pink pita coconut yoghurt, puffed quinoa, and sliced figs
