Mango Passion Fruit Parfaits
Ingredients
Mango Lassi
- 1 1/2 mangoes
- 150 ml coconut yoghurt
- Puffed quinoa
- 400 ml coconut yoghurt
- 6 passion fruits
- 6 strawberries
- 1/2 mango, diced
Preparation
Prepare the Mango Lassi by blending 1 1/2 mangoes and 150 ml of coconut yoghurt until smooth. Set aside.
In a separate bowl, layer the puffed quinoa at the bottom.
Pour the Mango Lassi over the quinoa layer, filling the glass about halfway.
Add a layer of diced mango on top of the Mango Lassi.
Cut the passion fruits in half and scoop out the pulp. Add the passion fruit pulp as the next layer.
Follow with a layer of coconut yoghurt, covering the passion fruit layer.
Add a layer of sliced strawberries over the coconut yoghurt.
Repeat the layers until the glass is filled, ending with a final layer of coconut yoghurt on top.
Optionally, garnish with extra diced mango and a sprinkle of puffed quinoa.
