Vegan Summer Popsicle

Ingredients

  • 2 1/2 cups strawberries
  • 2 1/2 cups diced mango
  • 1 1/4 cups full fat canned coconut milk
  • 2 tablespoons maple syrup
  • 3 tablespoons squeezed lime juice

Preparation

  1. Blend half of the coconut milk measurement with the diced mango and add 1 tablespoon of maple syrup

  2. Set aside

  3. Next, use the remaining ingredients and blend those to get the strawberrry mixture layer

  4. In order to have the color change you need to make some layers while putting the blended mixtures in the mold, you need to alternate scoops of mango and strawberry mixture into the popsicle molds

  5. Insert popsicle sticks and freeze everything until completely solid for a few hours
