Pineapple Spice Popsicles with Mint and Lime

Ingredients

  • 2.5 cups of fresh pineapple juice
  • 1/4 cup organic fresh mint leaves
  • 1 lime, peel removed
  • 2cm knob of organic ginger, skin peeled (or 1 tsp of ginger juice)

Preparation

  1. Using a high-speed blender, blend the pineapple juice, lime, mint and ginger into a thick juice consistency

  2. Pour this mixture into popsicle molds with popsicle sticks

  3. Place the mold in the freezer overnight or for at least 6 hours

Notes

  1. Pineapple contains bromelain, a digestive enzyme that helps break down and absorb proteins.

  2. These popsicles are sugar-free and made with all natural, nourishing ingredients including ginger and mint, which enhance digestion.
