Watermelon Sorbet with Coconut and Lime
Ingredients
- 6-8 cups watermelon (about a medium sized watermelon)
- 1/2 lime
- 2 tbsp sugar
- 1/2 cup canned coconut milk
Preparation
Cut the watermelon into small cubes.
Arrange the cubes on a tray and freeze until completely frozen.
Add the frozen watermelon to a blender.
Add the lime juice, sugar, and coconut milk.
Blend until smooth.
Transfer the mixture to a pan and freeze again until firm.
Tips
It’s best to freeze overnight, but it may take 4-5 hours.
Once frozen, serve in a bowl and top with optional toppings like a popsicle and fresh strawberries.
