Watermelon Sorbet with Coconut and Lime

Ingredients

  • 6-8 cups watermelon (about a medium sized watermelon)
  • 1/2 lime
  • 2 tbsp sugar
  • 1/2 cup canned coconut milk

Preparation

  1. Cut the watermelon into small cubes.

  2. Arrange the cubes on a tray and freeze until completely frozen.

  3. Add the frozen watermelon to a blender.

  4. Add the lime juice, sugar, and coconut milk.

  5. Blend until smooth.

  6. Transfer the mixture to a pan and freeze again until firm.

Tips

  1. It’s best to freeze overnight, but it may take 4-5 hours.

  2. Once frozen, serve in a bowl and top with optional toppings like a popsicle and fresh strawberries.
