Avocado Mint Ice Cream with Banana and Lime
Ingredients
- 2 avocados
- 2 bananas
- The solid part of a can of coconut milk (save the rest for smoothies)
- 2-3 Tbsp maple syrup
- Handful fresh mint
- Juice of one lime
- Zest lime for topping (optional)
- 1/2 tsp vanilla extract or few drops of natural peppermint oil
- Pinch sea salt
- Vegan chocolate chips (optional)
Preparation
Blend all ingredients.
Put it in a container suitable for the freezer.
Let it sit for 4 hours or overnight.
When serving, let it thaw for 10 to 15 minutes.
Serve with date syrup on top and crushed pistachios for extra delicious flavors.
