Avocado Mint Ice Cream with Banana and Lime

Ingredients

  • 2 avocados
  • 2 bananas
  • The solid part of a can of coconut milk (save the rest for smoothies)
  • 2-3 Tbsp maple syrup
  • Handful fresh mint
  • Juice of one lime
  • Zest lime for topping (optional)
  • 1/2 tsp vanilla extract or few drops of natural peppermint oil
  • Pinch sea salt
  • Vegan chocolate chips (optional)

Preparation

  1. Blend all ingredients.

  2. Put it in a container suitable for the freezer.

  3. Let it sit for 4 hours or overnight.

  4. When serving, let it thaw for 10 to 15 minutes.

  5. Serve with date syrup on top and crushed pistachios for extra delicious flavors.
