Vegan Healthy Coconut Raspberry Popsicles

Ingredients

  • 1 can of coconut milk
  • 1/2 cup of raspberries (you can use frozen)
  • 1/2 vanilla bean
  • 3-4 tbsp of maple syrup or agave (taste and adjust to your liking)
  • 1/2 cup of mango (frozen or fresh)
  • Juice of 1/2 lime (optional)

Preparation

  1. Add everything to the blender and process until completely smooth.

  2. Fill your popsicle molds, add a few mango chunks and raspberries if desired, insert wooden sticks, and freeze until needed.
