Refreshing Watermelon Sago Coconut Dessert

Ingredients

  • 1.5 coconuts
  • Sugar, to taste
  • 8 torn pandan leaves
  • 2-3 large handfuls of Thai sago
  • Basil seeds, to taste
  • Diced jackfruit
  • Diced watermelon

Preparation

  1. Add a bit more water to the grated coconut, squeeze out the thin coconut milk, then cook with sugar while stirring to prevent curdling; before boiling, add pandan leaves, cook until it boils, adjust taste, turn off heat, and let cool to room temperature

  2. Boil Thai sago in boiling water until it becomes clear, drain and rinse with cold water to remove slime, and drain until dry

  3. Ensure the coconut milk is cool, add all ingredients, stir well, adjust taste, and refrigerate until cold

  4. Similu semangka is ready to enjoy

Tips

  1. For people with cholesterol, you can substitute coconut milk with milk, but the taste will be different; coconut milk is better

  2. If Thai sago is difficult to obtain, use other chewy sago, but Thai sago is preferable as it's traditional

  3. Thai sago is small, white, and round, available at markets

  4. Do not wash Thai sago before boiling as it can break; boil it in already boiling water
