Savory Lentil Soup

Ingredients

  • 1 tbsp avocado oil (can omit if oil-free)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 yukon gold potatoes, cubed
  • 2 cups dry lentils (brown, red, yellow or green)
  • 2 cups chopped fresh tomatoes
  • 2 cups chopped kale
  • 8 cups vegetable broth
  • 1 tsp dried rosemary
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 1/2 tsp ground coriander
  • 2 bay leaves
  • 1/4 tsp each salt and pepper (plus more to taste)

Preparation

  1. In a large pot over medium heat, add the oil and onion. Stir until fragrant, then add the garlic, salt and pepper. Stir to mix, then add the carrots and celery. Cook while stirring for 3 minutes.

  2. Add the cumin, rosemary, thyme, coriander and potatoes. Stir together and cook for an additional minute.

  3. Add the tomatoes, lentils and broth. Stir together and bring to a simmer. Cover with a lid and cook on low heat for 40 minutes, stirring periodically.

  4. Remove bay leaves. Take 2 cups of the soup and blend in a blender or use an immersion blender or potato masher. Add the blended mixture back to the soup and mix.

  5. Add the kale and cook for 5 minutes. Serve and enjoy.
