Slow-Roasted Cherry Tomato Pasta

Ingredients

  • 1 small white onion
  • 3 garlic cloves
  • 1 tin of good quality chopped tomatoes or passata
  • A generous handful of fresh basil leaves
  • 1 tablespoon olive oil
  • A generous pinch of salt and pepper

Slow roasted tomatoes

  • 250g cherry tomatoes
  • Olive oil (for drizzling)
  • Salt and pepper to taste

To serve

  • Pasta (your favorite)

Preparation

  1. Slice the tomatoes in half and place them cut-side up on a baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven at 150°C for 35-40 minutes.

  2. In a large pan, heat olive oil and sauté the chopped onion for about 5 minutes until it starts to brown.

  3. Add minced garlic and cook for another minute.

  4. Add the chopped tomatoes or passata, stir, reduce heat to simmer, cover, and cook for 20-25 minutes.

  5. Stir in the chopped basil and cook for an additional minute.

  6. Meanwhile, cook your favorite pasta according to package instructions.

  7. Drain the pasta and add it to the pan with the tomato sauce.

  8. Sprinkle with fresh basil leaves and top with the slow-roasted cherry tomatoes. Serve and enjoy.

Tips

  1. Roast the tomatoes at a low temperature to keep their shape, similar to sun-dried tomatoes, and avoid higher temperatures that could turn them into sauce.
