Spicy Peanut Butter Tofu Bowl
Ingredients
- 1/2 pack firm or extra firm tofu
- 1/2 small onion
- 4 cloves garlic
- 1/2 cup cilantro
- 1/2 lemon
- 4 handfuls spinach
- 1/2 cup frozen peas
- 1 cup rice, white or brown
Sauce
- 1/4 cup natural peanut butter
- 1/2 cup canned coconut milk
- 1/2 cup water, more to thin as needed
- 3 tbsp tamari
- 2.5 tsp harissa or chili garlic sauce
- 2 tbsp agave
- 1/2 tsp salt
Preparation
Heat a skillet on medium heat and sauté onion and garlic until fragrant. Add tofu and sauté until it begins to brown and crisp, about 5-10 minutes.
While the tofu is cooking, mix the sauce ingredients together until combined. Pour the sauce into the pan with the tofu and simmer on low until it begins to thicken, adding more water if needed to thin out.
Add spinach and toss until wilted. Then add cilantro, peas, and lemon juice. Adjust flavor to your liking, adding more salt or chili garlic sauce for spice.
Cook rice according to package instructions and serve the tofu mixture with the rice, garnished with more cilantro.
