Vegan Breakfast Quesadilla
Ingredients
- almond flour tortilla
- vegan egg substitute mixed with seasonings of choice
- pepper jack or cheddar shreds
- vegan bacon
- avocado slices
- tomato slices
- green onions
- cilantro
Preparation
Heat EVOO in a non stick or cast iron skillet. Pour mixture in skillet and spread into an even layer
Sprinkle with a thin layer of cheese and top with tortilla
Let cook until egg is set up and then use a large spatula to carefully flip
Top with a little more cheese if desired and remaining ingredients for filling
After a minute or two, fold over like a quesadilla
Top with almond milk Greek yogurt or sour cream and hot sauce or salsa of choice
