Vegan Breakfast Quesadilla

Ingredients

  • almond flour tortilla
  • vegan egg substitute mixed with seasonings of choice
  • pepper jack or cheddar shreds
  • vegan bacon
  • avocado slices
  • tomato slices
  • green onions
  • cilantro

Preparation

  1. Heat EVOO in a non stick or cast iron skillet. Pour mixture in skillet and spread into an even layer

  2. Sprinkle with a thin layer of cheese and top with tortilla

  3. Let cook until egg is set up and then use a large spatula to carefully flip

  4. Top with a little more cheese if desired and remaining ingredients for filling

  5. After a minute or two, fold over like a quesadilla

  6. Top with almond milk Greek yogurt or sour cream and hot sauce or salsa of choice
