Vegan Easy Potato Salad
Ingredients
- 6 medium potatoes
- 200 ml vegetable broth
- 1 onion, red
- 1 garlic clove
- 2 tsp parsley (frozen)
- 1 tsp agave syrup
- 1 tsp mustard with seeds
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- salt & pepper to taste
Preparation
Wash the potatoes and cook them in boiling water with the skin until they are soft. Let them cool and slice them.
Dice the onions and garlic finely and add them to a bowl with the remaining ingredients.
Add the potatoes and mix well. Let sit for 1-2 hours and serve.
