Vegan Miso Tahini Roasted Chickpea Salad

Ingredients

Salad base

  • Greens
  • Chopped cucumber
  • Cherry tomatoes
  • Chopped dried apricots
  • Roasted chickpeas

Miso tahini dressing

  • 1 tsp miso
  • 2 tbsp rice vinegar
  • 2 tsp tamari
  • 2 tsp tahini
  • 1 tbsp maple syrup
  • 1/2 tsp mustard
  • 1 tbsp water
  • Pinch of garlic powder
  • Pinch of ginger powder

Preparation

  1. In a large bowl, combine greens, cucumber, cherry tomatoes, dried apricots, and roasted chickpeas

  2. Add tamari and miso to a small bowl. Mix well to mash the miso into the mixture

  3. Add the remaining dressing ingredients and whisk together until smooth

  4. Pour the dressing over the salad and toss to coat
