Vegan Spicy Lentil Spread
Ingredients
- 190 g red lentils
- 2 tbsp lemon juice
- 1 tbsp tomato puree
- 1 clove garlic, pressed
- 2 tsp ground coriander
- 2 tsp harissa
- 2 tsp cumin
- 1/2 tsp turmeric
- 2 tbsp extra virgin olive oil
- Freshly ground salt and pepper to taste
- Mixed sprouts
Preparation
Rinse the red lentils under cold water.
Place them in a saucepan with a teaspoon of salt and enough water to cover the lentils generously.
Bring to a boil and then let it simmer gently for about 10 minutes.
Drain and let them cool in a sieve.
Add the lentils and the rest of the ingredients to a food processor or blender.
Puree until smooth and season with salt and pepper.
Serve with sprouts for extra flavor and crunch.
