Vibrant Spring Stir-Fry with Glass Noodles and Tofu
Ingredients
- 1 red paprika
- 1 carrot
- 1/4 chili
- 1/2 thumb-sized piece of ginger
- 1/2 lime
- Salt and pepper
- 3 tablespoons soy sauce
- 2 portions glass noodles
- 1 handful cilantro
- Sesame oil
- Handful fried tofu
- 1/4 cucumber
Preparation
Note: Prefried tofu can be found in most Asian shops.
Chop the cucumber into small pieces.
Slice the carrot and paprika into thin strips.
Chop the chili and ginger into tiny pieces.
Fry the chili and ginger in oil.
Add the paprika and carrot.
Add the lime and cook for a couple of minutes.
Season with salt and pepper.
Deglaze with soy sauce.
Cook the glass noodles.
Chop the cilantro.
In another pan, refry the tofu.
Mix the vegetables with the glass noodles.
Top with cucumber, tofu, and cilantro.
Add more soy sauce and lime if needed.
