Busy Family Vegan Spaghetti One Pan Meal
Ingredients
- 500g whole grain spaghetti, not cooked
- 50g tahini (or 30g olive oil)
- 3 garlic cloves, minced
- 1 onion, thinly sliced
- 1 tbsp seasoning
- 1 tbsp dried herbs
- 1 package (about 500g) of diced tomatoes
- half package (about 250g) of tomato sauce
- 1 zucchini
- 1 head of broccoli (or other vegetables like bell pepper)
- 15g nutritional yeast
- 626ml (3 cups) water
- cover with vegan cheese
Preparation
Preheat the oven to 200°C/400°F.
Place the uncooked spaghetti in a baking dish. Add the tahini, garlic, onions, seasoning and herbs. Use your hands to gently toss and evenly distribute the ingredients.
Add the tomatoes, zucchini, broccoli, water, tomato sauce on top of the spaghetti, and toss it again using tongs to evenly coat the spaghetti with the sauce and vegetables.
Sprinkle vegan cheese on top to cover the spaghetti.
Bake uncovered in the preheated oven for 45 – 55 minutes or until the top is browned and bubbly.
Remove from the oven and garnish with fresh basil and vegan cheese or nutritional yeast. Cut into squares to serve.
