Chicken Meatball and Spinach Soup
Ingredients
- Meatballs
- 500 g ground chicken
- 1/2 cup oats
- 1 egg
- 1 tsp lemon juice
- 1 tsp lemon rind
- 1 garlic clove
- 1 tsp salt and pepper
- Pepper
- ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Soup
- 1 Tablespoon olive oil
- 1/4 cup chopped onion
- 2 large carrots finely diced
- 1/2 cup celery finely diced
- 3 cloves garlic
- 1/2 tsp cumin
- 1 bay leaf
- 6 cups chicken stock
- 2 large handfuls spinach chopped
Preparation
Mix all the meatball ingredients well and roll into small meatballs.
In a large pot add the olive oil, sauté the onions for a minute or two, then add the garlic, carrots, celery, cumin and cook for about 3 minutes more
Add 2 gluten free chicken bouillon cubes and 6 cups of water to the pot and bring it to a boil. Add the meatballs. Reduce heat to a simmer and cook for about 15 minutes until the meatballs and vegetables are cooked
Stir in spinach and cook for a couple of minutes
