Chicken Meatball and Spinach Soup

Ingredients

  • Meatballs
  • 500 g ground chicken
  • 1/2 cup oats
  • 1 egg
  • 1 tsp lemon juice
  • 1 tsp lemon rind
  • 1 garlic clove
  • 1 tsp salt and pepper
  • Pepper
  • ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Soup
  • 1 Tablespoon olive oil
  • 1/4 cup chopped onion
  • 2 large carrots finely diced
  • 1/2 cup celery finely diced
  • 3 cloves garlic
  • 1/2 tsp cumin
  • 1 bay leaf
  • 6 cups chicken stock
  • 2 large handfuls spinach chopped

Preparation

  1. Mix all the meatball ingredients well and roll into small meatballs.

  2. In a large pot add the olive oil, sauté the onions for a minute or two, then add the garlic, carrots, celery, cumin and cook for about 3 minutes more

  3. Add 2 gluten free chicken bouillon cubes and 6 cups of water to the pot and bring it to a boil. Add the meatballs. Reduce heat to a simmer and cook for about 15 minutes until the meatballs and vegetables are cooked

  4. Stir in spinach and cook for a couple of minutes
