Choc Chip Peanut Butter Cookies
Ingredients
- 1/2 cup Peanut Butter
- 1/4 cup Vegan Butter
- 1/3 cup Sweetener
- 1/4 cup Coconut Sugar
- 1 tsp Vanilla
- 1 cup Oat Flour
- 1/2 tsp Baking Soda
- 1 tbsp Apple Cider Vinegar
- Add-ins of your preference (e.g., chocolate chips, peanuts)
Preparation
In a large bowl, cream together peanut butter, vegan butter, sweetener, sugar, and vanilla.
Add oat flour, baking soda, and apple cider vinegar. Mix until a dough forms, then fold in your chosen mix-ins (such as chocolate chips and peanuts).
Roll the dough into balls, flatten them, and place them on a baking tray.
Freeze the cookies on the tray for 15 minutes.
Preheat the oven to 160°C (320°F), then bake the cookies for 12 minutes.
Leave the cookies on the tray to cool completely.
Notes
The cookies will be soft when they come out of the oven but will firm up as they cool.
