Irresistible Churro Muffins with Pumpkin Spice Twist

Ingredients

  • 1 cup Flour
  • 2 tsp Baking Powder
  • 1/3 cup Sweetener
  • 1/2 cup Almond Milk
  • 1/4 cup Olive Oil
  • 1 tsp Cinnamon Spice (using Unicorn Superfoods Pumpkin Spice powder)
  • Cinnamon Sugar (for dusting)

Preparation

  1. Preheat the oven to 180°C (356°F).

  2. In a mixing bowl, combine the flour, baking powder, sweetener, almond milk, olive oil, and Unicorn Superfoods Pumpkin Spice powder (or 1 tsp cinnamon spice).

  3. Mix all the ingredients together until a smooth and well-combined batter forms.

  4. Pour the batter into a muffin tray, filling each cup about 3/4 full.

  5. Bake the muffins in the preheated oven for 25-30 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.

  6. While the muffins are still warm, roll them in cinnamon sugar, coating them generously for that classic churro flavor.

  7. Allow the churro muffins to cool slightly before serving.
