Fluffy Pumpkin Spice Baked Oats with Protein Frosting

Ingredients

  • 1/3 cup Oat Flour
  • 1 tbs Protein Powder (@macr0mike - d/c “amb-han”)
  • 1 tsp Pumpkin Spice Blend (@unicornsuperfoods)
  • 1 tsp Baking Powder
  • 1 tbs Pumpkin Purée* (substitute: coconut yogurt or applesauce)
  • 1/4 cup Almond Milk

For the Frosting

  • Coconut Yogurt mixed with Protein Powder (adjust amounts for desired thickness/flavor)

Preparation

  1. Preheat the oven to 200°C.

  2. Mix all the ingredients together until the mixture is well combined and smooth.

  3. Pour the mixture into a ramekin or mug.

  4. Bake in the preheated oven for 15 minutes.

  5. Top the baked oats with the frosting.
