Vegan Caramel Mandala Biscuits with Spiced Chocolate
Ingredients
Dough
- 300g flour
- 200g vegan butter, cold
- 80g sugar
- 40g carob powder (for the caramel flavor)
- 2 packets vanilla sugar
- 1 pinch of salt
Filling
- 200g vegan chocolate
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1 pinch of cloves
Preparation
Quickly knead the dough ingredients into a smooth dough.
Shape the dough into a ball, flatten it, and wrap it in plastic wrap. Place it in the fridge for at least 30 minutes.
Preheat the oven to 180°C (356°F) using top/bottom heat.
Sprinkle a work surface with a little flour and roll out the dough to a thickness of approximately 2-3 mm.
Cut out round biscuits and place them on a cold baking tray lined with baking paper.
Cut a pattern into half of the biscuits using small motif cutters. Chill for another 15 minutes.
Bake the chilled biscuits for 10 minutes on the middle shelf. Allow them to cool completely on a cooling rack.
Melt the chocolate and mix it with the spices.
Brush the unpatterned biscuits on the baking side with chocolate and top them with the patterned biscuits.
