Nutty Crunch Granola with Dates

Ingredients

  • 350g oatmeal
  • 125g dates (soaked in hot water)
  • 3 tbsp vegan protein powder
  • 50g almonds
  • 50g peanuts
  • 50g hazelnuts
  • 50g cashew nuts
  • 2 tbsp chia seeds
  • 2 tbsp flaxseed
  • 2 handfuls of coconut chips (optional)
  • 4 tbsp puffed quinoa (optional)

Preparation

  1. Soak the dates in enough hot water to cover them. After about 1 hour, blend them in a food processor along with the soaking water to create a date syrup.

  2. In a mixing bowl, combine the dry ingredients (oatmeal, vegan protein powder, almonds, peanuts, hazelnuts, cashew nuts, chia seeds, flaxseed).

  3. Add the date syrup to the dry mixture and mix thoroughly to combine.

  4. Spread the mixture onto a baking tray lined with baking paper, ensuring an even layer.

  5. Bake at 150°C (300°F) for 1 hour, turning the granola every 20 minutes to ensure even baking.

  6. Once the granola is baked and cooled, mix in the coconut chips and puffed quinoa if using.

  7. Serve the granola with your preferred choice of accompaniments such as chia pudding, figs, and grapes. Alternatively, enjoy it as a breakfast option with vegan milk.
