Flavorful Vegan Breakfast Tacos

Ingredients

  • Half bottle of JUST Egg (or scrambled tofu)
  • 1 can of chickpeas
  • 4 street tacos
  • 1 cup cilantro
  • 1 red onion, thinly sliced
  • 1 avocado, thinly sliced
  • 1 sliced green onion
  • 4 limes, quartered
  • 3/4 cup vegan mayonnaise (e.g., Follow Your Heart)
  • 1 tbsp sriracha
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste

Preparation

  1. In a bowl, mix vegan mayonnaise, sriracha, chili powder, and the juice of 1 lime. Set aside.

  2. Scramble JUST Egg or tofu in a small pot, seasoned with salt and a little butter.

  3. Drain and rinse chickpeas, then place them on a paper towel.

  4. Heat 1 tbsp of olive oil in a medium-sized pan. Once the oil sizzles, add the chickpeas and cook over medium heat with a light dusting of paprika. Cook until slightly golden, stirring occasionally.

  5. In a large pan, warm the street tacos over high heat on each side until they bubble.

  6. Assemble the tacos: Top each taco with scrambled eggs/tofu, cooked chickpeas, cilantro, red onion, avocado slices, sliced green onion, and a squeeze of lime juice.

  7. Drizzle the sriracha mayo over the toppings.
