Lazy Charcuterie Board: Wholesome and Easy

Ingredients

  • Vegan Cheese Spread (recipe below)
  • Vegan Pepita Pesto (recipe coming soon)
  • Figs
  • Cherry Heirloom tomatoes
  • Almonds
  • Pepitas
  • Blueberries
  • Cracked Pepper Crackers
  • Balsamic Glaze
  • Arugula
  • Herb Focaccia
  • Tiny Pumpkin (for festive touch)

Spreadable Vegan Cheese

  • 1 cup soaked raw skin-free slivered almonds OR 1 cup blanched almond flour
  • 1 1/2 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 3 tsp Nutritional Yeast
  • 3 tbsp green onions
  • 1/2 cup water OR plant-based milk

Preparation

  1. If using slivered almonds, soak them for 1 hour in hot water, boil for 10 minutes, or overnight in room temperature water. If using almond flour, skip this step.

  2. Add all the cheese spread ingredients to a food processor or blender. Process or blend until smooth.

  3. Place the cheese spread in a sealable container and refrigerate for 1 hour for best results.
