Lazy Charcuterie Board: Wholesome and Easy
Ingredients
- Vegan Cheese Spread (recipe below)
- Vegan Pepita Pesto (recipe coming soon)
- Figs
- Cherry Heirloom tomatoes
- Almonds
- Pepitas
- Blueberries
- Cracked Pepper Crackers
- Balsamic Glaze
- Arugula
- Herb Focaccia
- Tiny Pumpkin (for festive touch)
Spreadable Vegan Cheese
- 1 cup soaked raw skin-free slivered almonds OR 1 cup blanched almond flour
- 1 1/2 tbsp Lemon Juice
- 1/2 tsp Salt
- 3 tsp Nutritional Yeast
- 3 tbsp green onions
- 1/2 cup water OR plant-based milk
Preparation
If using slivered almonds, soak them for 1 hour in hot water, boil for 10 minutes, or overnight in room temperature water. If using almond flour, skip this step.
Add all the cheese spread ingredients to a food processor or blender. Process or blend until smooth.
Place the cheese spread in a sealable container and refrigerate for 1 hour for best results.
