Cooling Green Smoothie Bowl with Walnuts, Avocado, and Spinach
Ingredients
- 1 tablespoon mixed seeds
- 6 walnuts
- coconut water
- 1/2 cup frozen mango
- juice of 1/2 lime
- 2 large handfuls spinach
- 1 small avocado
Toppings
- frozen cucumber slices
- buckwheat groats
- mint leaves
- blueberries
- mixed seeds
- mint dark chocolate chunks
Preparation
Tip 1 tablespoon of mixed seeds and 6 walnuts into your blender cup, cover with coconut water, and leave to soak overnight or for 30 minutes.
Add 1/2 cup of frozen mango, juice of 1/2 lime, 2 large handfuls of spinach, and 1 small avocado.
Pour over additional coconut water and blend until smooth.
Spoon the mixture into a bowl and top with frozen cucumber slices, buckwheat groats, mint leaves, blueberries, mixed seeds, and mint dark chocolate chunks.
