Cooling Green Smoothie Bowl with Walnuts, Avocado, and Spinach

Ingredients

  • 1 tablespoon mixed seeds
  • 6 walnuts
  • coconut water
  • 1/2 cup frozen mango
  • juice of 1/2 lime
  • 2 large handfuls spinach
  • 1 small avocado

Toppings

  • frozen cucumber slices
  • buckwheat groats
  • mint leaves
  • blueberries
  • mixed seeds
  • mint dark chocolate chunks

Preparation

  1. Tip 1 tablespoon of mixed seeds and 6 walnuts into your blender cup, cover with coconut water, and leave to soak overnight or for 30 minutes.

  2. Add 1/2 cup of frozen mango, juice of 1/2 lime, 2 large handfuls of spinach, and 1 small avocado.

  3. Pour over additional coconut water and blend until smooth.

  4. Spoon the mixture into a bowl and top with frozen cucumber slices, buckwheat groats, mint leaves, blueberries, mixed seeds, and mint dark chocolate chunks.
