Cozy Double Lentil Soup with Veggies and Bread
Ingredients
- 1 onion, chopped
- 4 carrots, chopped
- 6 cups vegetable broth
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup green lentils, rinsed and picked over
- 1 cup red lentils, rinsed and picked over
- 1 medium potato, chopped
- 2 Tablespoons apple cider vinegar
Preparation
Add all ingredients except apple cider vinegar to a pressure cooker. Lock lid in place according to manufacturer’s instructions and set to cook on manual for 6 minutes.
Allow pressure to release naturally and always be careful when removing the lid.
When ready to serve, add salt and pepper to taste and stir in vinegar.
Serve with lots of fresh herbs and crusty bread.
