Cozy Vegetable and Macaroni Soup
Ingredients
- 1 onion, finely chopped
- 3 carrots, diced
- 2 tbsp olive oil (optional)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp ground turmeric
- 3/4 cup dry pasta (such as elbow macaroni)
- 4 to 5 cups vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 can cannellini beans, drained and rinsed
- 1 cup napa cabbage, very thinly sliced
- 1 large handful baby spinach
Preparation
In a large pot, add onions, carrots, oil, salt, pepper, garlic powder, and turmeric. Stir and cook on medium heat covered for 10 minutes, stirring occasionally and adding water if needed to prevent burning.
Add pasta, broth (starting with 4 cups and adding more if desired), beans, oregano, and basil, then stir.
Cook until pasta is barely al dente.
Add cabbage and cook for 1 minute.
Add spinach, stir, and cook for 1 to 2 minutes.

This soup is perfect for preparing in big batches and enjoying on cold nights.
