Creamy Sun-Dried Tomato and Roasted Pepper Sauce

Ingredients

  • 1 cup sun-dried tomatoes (marinated, drained)
  • 1/4 cup kalamata olives
  • 1/2 cup roasted red peppers (drained)
  • 3/4 cup to 1 cup oat milk
  • 1/4 tsp garlic powder
  • Squeeze of lemon juice
  • Dash of salt and pepper to taste
  • 2 tbsp olive oil

Preparation

  1. Blend all ingredients in a food processor, scraping down sides as needed.

  2. Oat milk can be substituted with another plant-based milk, and olive oil can be substituted with more milk if desired.

  3. Serve with penne pasta, zucchini, and asparagus.
