Healthy Green Pasta with Nut Sauce
Ingredients
- 1 pack or 12 big leaves cavolo nero
- Pasta for 2 people
- 1 small handful (about 50g) almonds
- 1 small handful (about 50g) cashews
- 2 tbsp nutritional yeast
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper
- 2 cloves garlic
- Pasta water
- Water to loosen when blending if needed
Preparation
Blanch the cavolo nero and quickly soak the nuts for 10 minutes.
Drain and add the cavolo nero, nuts, nutritional yeast, olive oil, garlic, salt, and pepper along with a little water to a high-speed blender and blend until smooth.
Cook the pasta and reserve one cup of the cooking water.
Heat the sauce gently, add some pasta water to loosen, combine with the pasta, and serve with cashew parmesan and roasted cherry tomatoes if desired.
