Indian Style Pea Soup

Ingredients

  • peas - 2 cups ( frozen )
  • spinach - 1 cup
  • onion - 1 medium size
  • cumin seeds- 1tsp
  • garlic flakes - 4 - 5 chopped
  • black pepper- 1/2 tsp
  • fennel powder- 2tsp
  • ginger powder- 1tsp
  • salt according to your taste
  • olive oil - 1tbsp
  • coconut cream - 1tbsp
  • water - 2cups / vegetable stock
  • lemon juice - 2tsp

Preparation

  1. In a pan add oil, cumin seeds let it turn into brown color , add onions , garlic and saute, let the onion turn translucent

  2. Add fennel powder, ginger powder, salt, mix well for few seconds and add peas to the spices

  3. Mix well and add water and cook on a medium flame for 10 to 15 minutes, while stirring occasionally

  4. On another pan I blanched spinach to add later while blending to get this nice green color

  5. You can add with peas but the spices color will make this soup look brown

  6. Allow the pea mixture to cool completely and blend in a mixer with blanched spinach till smooth

  7. You can add warm water or more stock if you want it runny but this recipe will give you thick consistency soup

  8. Trasfer the mixture into a deep nonstick pan , add more salt if needed, black pepper, lemon juice and some more water if needed

  9. Mix well cook for 2- 3 minutes

  10. Take off from the heat add coconut cream, serve hot adding drizzle of olive oil and your favorite toppings
