Lemon Courgette Spaghetti with Parmesan
Ingredients
- 200g spaghetti
- 2 courgettes
- 1 shallot
- 4 cloves garlic
- 175ml white wine
- 50g parmesan (or more)
- 50g butter
- 1 lemon
Preparation
Put the pasta on to cook.
Fry sliced courgettes until caramelised, then set aside on paper towel.
In the same pan, fry diced shallots for 3-5 minutes.
Add minced garlic and fry for another minute before pouring in the wine.
Let it bubble for a moment and then add in drained pasta, saving the pasta water.
Add back in courgettes, grated Parmesan and butter, mix well and add pasta water to loosen.
Add more butter and parmesan to make a nice silky sauce and then stir through lemon juice.
Serve with lemon zest and lots of black pepper.

Courgettes from the garden make it even more enjoyable.
This recipe takes about 20 minutes to prepare.
