Instant Pot Goat Cheese Spinach Risotto

Ingredients

  • 1 shallot diced
  • 1 garlic clove minced
  • 1/2 teaspoon chili flakes (optional)
  • 1 cup Arborio rice
  • 2 cups broth
  • 2 tablespoons butter or vegan butter (divided)
  • 2 cups diced spinach
  • 2 tablespoons goat cheese
  • 1/2 lemon squeezed

Preparation

  1. Hit sauté on your Instant Pot and add 1 tablespoon vegan butter plus a splash of oil

  2. Add shallot and cook for 1 minute, then add garlic and chili flakes if using and cook for another 30 seconds while stirring; add Arborio rice

  3. Add broth and hit cancel

  4. Pressure cook for 5 minutes and quick release

  5. Stir in spinach, remaining 1 tablespoon of butter, goat cheese, and lemon juice

  6. Serve with your choice of protein

Tips

  1. This risotto is a great way to sneak in extra vegetables like spinach

  2. It turns out super creamy thanks to the goat cheese

  3. For a protein option, pan fry sockeye salmon fillets for 3 minutes per side in avocado oil
