Instant Pot Goat Cheese Spinach Risotto
Ingredients
- 1 shallot diced
- 1 garlic clove minced
- 1/2 teaspoon chili flakes (optional)
- 1 cup Arborio rice
- 2 cups broth
- 2 tablespoons butter or vegan butter (divided)
- 2 cups diced spinach
- 2 tablespoons goat cheese
- 1/2 lemon squeezed
Preparation
Hit sauté on your Instant Pot and add 1 tablespoon vegan butter plus a splash of oil
Add shallot and cook for 1 minute, then add garlic and chili flakes if using and cook for another 30 seconds while stirring; add Arborio rice
Add broth and hit cancel
Pressure cook for 5 minutes and quick release
Stir in spinach, remaining 1 tablespoon of butter, goat cheese, and lemon juice
Serve with your choice of protein

This risotto is a great way to sneak in extra vegetables like spinach
It turns out super creamy thanks to the goat cheese
