Creamy Daal Soup with Garlicky Croutons
Ingredients
- Leftover daal
- Water
- 1 slice Sourdough bread
- Butter
- Minced garlic
- Double cream
- Coriander leaves to garnish
Preparation
Blend any leftover daal with a little water to adjust the consistency to make a smooth spicy soup. Blend until smooth, add a bit of double cream to taste
For the croutons, cut a slice of sourdough into cubes.
Melt a knob of butter in a frying pan, add a teaspoon of minced garlic and the sourdough cubes.
Cook on a medium heat to make croutons.
Sprinkle onto your soup and serve with a drizzle of double cream
