Creamy Daal Soup with Garlicky Croutons

Ingredients

  • Leftover daal
  • Water
  • 1 slice Sourdough bread
  • Butter
  • Minced garlic
  • Double cream
  • Coriander leaves to garnish

Preparation

  1. Blend any leftover daal with a little water to adjust the consistency to make a smooth spicy soup. Blend until smooth, add a bit of double cream to taste

  2. For the croutons, cut a slice of sourdough into cubes.

  3. Melt a knob of butter in a frying pan, add a teaspoon of minced garlic and the sourdough cubes.

  4. Cook on a medium heat to make croutons.

  5. Sprinkle onto your soup and serve with a drizzle of double cream
