Crispy Indian Roomali Roti
Ingredients
- 1/4 cup whole wheat flour
- 1/4 cup all-purpose flour
- salt
- 1 tablespoon oil
- oil for cooking
- 1/2 teaspoon butter
- 1/2 garlic clove, finely chopped (optional)
- coriander leaves
- coriander stems
- 1/2 teaspoon red chili powder
Preparation
Combine 1/4 cup wheat flour and 1/4 cup maida
Add salt to the flour mixture
Add 1 tablespoon oil and make a soft dough
Apply a little oil on the dough and cover it for 10 minutes
Roll the dough to make a thin and large roomali roti
Take a kadai and apply a little oil on it
Cook the roti on the back of the kadai until bubbles form
Reverse the roti and cook again
Keep rotating and press from the sides while cooking
The middle part may get dark or black due to heat
The roti will assume a half moon shape
Let the roti cool down
Take 1/2 teaspoon butter, 1/2 garlic clove finely chopped, and coriander stems, then melt in microwave for 5 seconds
Add 1/2 teaspoon red chili powder to the mixture
Add salt to the mixture (black salt or chat masala can be used too)
Serve the roti
Apply the garlic butter mixture and garnish with coriander leaves
Tips
Omit garlic if following a Jain diet
Sprinkle onions for extra flavor if desired
