Crispy Indian Roomali Roti

Ingredients

  • 1/4 cup whole wheat flour
  • 1/4 cup all-purpose flour
  • salt
  • 1 tablespoon oil
  • oil for cooking
  • 1/2 teaspoon butter
  • 1/2 garlic clove, finely chopped (optional)
  • coriander leaves
  • coriander stems
  • 1/2 teaspoon red chili powder

Preparation

  1. Combine 1/4 cup wheat flour and 1/4 cup maida

  2. Add salt to the flour mixture

  3. Add 1 tablespoon oil and make a soft dough

  4. Apply a little oil on the dough and cover it for 10 minutes

  5. Roll the dough to make a thin and large roomali roti

  6. Take a kadai and apply a little oil on it

  7. Cook the roti on the back of the kadai until bubbles form

  8. Reverse the roti and cook again

  9. Keep rotating and press from the sides while cooking

  10. The middle part may get dark or black due to heat

  11. The roti will assume a half moon shape

  12. Let the roti cool down

  13. Take 1/2 teaspoon butter, 1/2 garlic clove finely chopped, and coriander stems, then melt in microwave for 5 seconds

  14. Add 1/2 teaspoon red chili powder to the mixture

  15. Add salt to the mixture (black salt or chat masala can be used too)

  16. Serve the roti

  17. Apply the garlic butter mixture and garnish with coriander leaves

Tips

  1. Omit garlic if following a Jain diet

  2. Sprinkle onions for extra flavor if desired
