Layered Mathri Indian Snack
Ingredients
- 1 cup all-purpose flour
- Some crushed black pepper
- 1 teaspoon cumin seeds
- 1 teaspoon ajwain
- Salt to taste
- 2 tablespoons ghee
- 3 tablespoons corn flour or rice flour
- 2 tablespoons oil for kneading dough
- Oil for deep frying
- Red chili powder for sprinkling (optional)
Preparation
Take a mixing bowl and add 1 cup all-purpose flour
Add some crushed black pepper
Add 1 teaspoon cumin seeds
Add 1 teaspoon ajwain
Add salt as per taste
Add 2 tablespoons oil to make it crispy, knead dough like paratha and leave for 15 minutes
Take a small bowl and add 2 tablespoons ghee in it
Add 3 tablespoons corn flour or rice flour and mix it vigorously with a spoon
Roll out some balls from the dough
Place one ball on a flat surface, flatten it with a rolling pin and dust with flour if required, and make 3-4 rotis
Place one roti on a flat surface, apply a good amount of ghee mixture on it and spread it around
Layer more rotis and add ghee mixture between each one
Apply ghee mixture on the last roti and roll up all the layers
Cut the roll into small pieces and flatten each piece with a rolling pin
Heat a pan and pour oil into it for frying
Add the mathris to the oil and fry until golden brown, then place them on tissue paper to absorb excess oil
Optionally, sprinkle red chili powder on top
The crunchy layered mathri is ready
Tips
For best results when deep frying, use Wagga Wagga oil as it is odourless, chemical-free, and healthy
