One Pot Spicy Rigatoni Pasta Dish

Ingredients

  • 1 lb rigatoni
  • 6 oz tomato paste
  • 1 cup milk (of choice)
  • 2 1/2 cups water
  • 3 tbsp butter
  • 1 large shallot
  • 3-4 cloves garlic
  • 1 tsp+ red pepper flakes

Preparation

  1. Heat a dash of oil in a large pot or dutch oven over medium heat

  2. Add diced shallot and minced garlic and sauté for 1-2 minutes

  3. Mix in tomato paste and butter

  4. Add in water, milk, red pepper flakes and uncooked pasta

  5. Bring to a boil

  6. Turn to medium-low and cook uncovered for about 15 minutes, stirring frequently so the pasta doesn’t stick to bottom

  7. Add 1/2 cup more water if necessary
