Creamy Lemon and Spinach Spaghetti with Garlic Crumb
Ingredients
- 1/2 shallot
- 4 cloves garlic
- 1/2 lemon
- 2-3 handfuls spinach
- 100ml vegetable stock
- 150g spaghetti
- 50ml double cream
- 1 tablespoon nutritional yeast or parmesan
- salt
- pepper
- olive oil
Breadcrumbs
- 1 clove garlic
- 1 small red chilli
- 400g breadcrumbs
- olive oil
- salt
- pepper
Preparation
Get the pasta on to boil.
Dice the shallot and sauté in olive oil for a few minutes, then add the minced garlic and fry for another minute.
Pour in the stock and the spinach.
When the pasta is cooked, drain it but reserve some cooking water.
Add the pasta to the pan along with the cream and nutritional yeast or parmesan, stir well adding pasta water to loosen.
Fry the breadcrumbs, minced garlic and diced chilli in olive oil until golden brown and sprinkle on top of the spaghetti.
