Moroccan Inspired Roasted Rainbow Potatoes

Ingredients

  • 2 small beets
  • 1 purple potato
  • 2 Yukon gold potatoes
  • 1 sweet potato
  • 1/2 cup olive oil
  • Salt to taste
  • Pepper to taste
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground mace
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground clove
  • 1/2 teaspoon turmeric
  • 2 cloves garlic
  • Juice of 1/2 lemon

Preparation

  1. Preheat oven to 450 degrees Fahrenheit.

  2. In a wide bowl, add 1/4 cup olive oil, the ground spices, salt, pepper, garlic and mix well.

  3. Add all the cubed potatoes onto the tray and pour the spice-oil mix on the potatoes.

  4. Toss well and sprinkle some lemon and the remaining 1/4 cup oil.

  5. Roast the potatoes in the oven for about 25-30 minutes.

  6. Remove from the oven, sprinkle some fresh pepper if you like, and serve immediately.
