One-Pan Mexican Quinoa Bowl

Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1/2 can Fire-Roasted Diced Tomatoes
  • 3/4 cup Corn Kernels
  • 1 Jalapeno (optional)
  • 4 Garlic Cloves
  • 1 can Black Beans
  • 1 tsp Cumin Powder
  • 1 tsp Chili Powder
  • 1 tbsp Olive Oil
  • 1/2 Yellow Onion
  • Juice of 2 limes
  • 1-2 Avocados
  • Cilantro for garnish

Preparation

  1. Heat a large pan on medium heat and add oil. Add onion and jalapeño. Sauté for 1-2 minutes, then add garlic and cumin. Sauté for another 2-3 minutes.

  2. Add vegetable broth, quinoa, and diced tomatoes. Reduce heat to a simmer, cover with a lid, and cook for 10-15 minutes until quinoa is cooked.

  3. Once quinoa is cooked, add black beans, corn, and chili powder. Cook for another 3-5 minutes.

  4. Serve and top with avocado slices, cilantro, and lime juice.
