One-Pan Mexican Quinoa Bowl
Ingredients
- 1 cup Quinoa
- 2 cups Vegetable Broth
- 1/2 can Fire-Roasted Diced Tomatoes
- 3/4 cup Corn Kernels
- 1 Jalapeno (optional)
- 4 Garlic Cloves
- 1 can Black Beans
- 1 tsp Cumin Powder
- 1 tsp Chili Powder
- 1 tbsp Olive Oil
- 1/2 Yellow Onion
- Juice of 2 limes
- 1-2 Avocados
- Cilantro for garnish
Preparation
Heat a large pan on medium heat and add oil. Add onion and jalapeño. Sauté for 1-2 minutes, then add garlic and cumin. Sauté for another 2-3 minutes.
Add vegetable broth, quinoa, and diced tomatoes. Reduce heat to a simmer, cover with a lid, and cook for 10-15 minutes until quinoa is cooked.
Once quinoa is cooked, add black beans, corn, and chili powder. Cook for another 3-5 minutes.
Serve and top with avocado slices, cilantro, and lime juice.
